This is a recipe that was very popular at the Bed & Breakfast my family operated in Eastern Tennessee.
Ingredients
- 2 cups egg substitute
- 1/2 cup fat-free milk
- 1/4 tsp salt
- 1/4 tsp pepper
- Cooking Spray
- 2/3 cup diced ham
- 1/2 cup diced orange bell pepper
- 1/2 cup thinly sliced green onions
- 1/2 cup shredded cheddar cheese
Directions
Preheat oven to 375 degrees F.
Combine first 4 ingredients in a small bowl, stirring well with a whisk.
Heat a medium nonstick skillet over medium-high heat. Coat pan with cooking spray.
Add ham, bell pepper and onions; sauté 2 minutes. Stir in egg mixture.
Reduce heat to medium, and cook 5 minutes, stirring occasionally for first 2 minutes. Top mixture with cheese.
Wrap handle of the pan with foil; bake at 375 degrees for 12 minutes or until center is set.
Cut Frittata into 4 wedges.
