Beef Jerky

 

This is a great, simple beef jerky recipe that everyone loves.
Feel free to adjust and change to your liking (hotter, sweeter – whatever you like).


Ingredients

1 pound beef round steak cut into thin strips
1/4 cup low sodium soy sauce
2 tablespoons Worcestershire sauce
2 tablespoons liquid smoke (you choose your type, mesquite-hickory etc..)
2 tablespoons brown sugar
2 teaspoons kosher salt
1 teaspoon fresh ground black pepper
1 teaspoon meat tenderizer (with msg kind or not, your choice)
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon paprika

Directions


Trim the steak of excess fat, or leave as much fat as you want.

Mix remaining ingredients together and stir well.

Add beef and marinade in freezer zip lock bag and let marinate overnight.

The next day, put strips in a gallon freezer ziplock bag in a single layer in the bag and pound flat with a meat pounder (see the video for a visual example).
Do this in batches as space in the ziplock bag allows the more meat, the more batches.

Put the beef slices in your dehydrator and set at 160F/71C for 8 to 10 hours depending on how you like your jerky, less time for soft and chewy and more time for crispy.

I keep my jerky in the refrigerator so it will last longer, but I don’t know why because it never lasts that long.
