Pineapple Rum Compote with Mint – Sous Vide
Pineapple Rum Compote with Mint – Sous Vide This is a recipe I found on the Anova Sous Vide website and it sounded good to serve at a party (at least the adults are the party). It turned out great and would make it again.
Margaritaville Volcano Nachos
This is a recipe that combines other recipes into one. I believe nachos should be a meal and not just some chips with some melted cheese drizzled over the top. I know what I am going to have when the Volcano blows! And this is it. Below are links to the other recipes you will need: Recipe for Margaritaville chili: http://hallidayskitchen.com/index.php/2018/06/08/margaritaville-chili/ Recipe for Pico De Gallo: http://hallidayskitchen.com/index.php/2018/06/21/pico-de-gallo-kicked-up/
Pico De Gallo – Kicked Up!
One of my favorite things to eat is good fresh Pico De Gallo (no, it is not salsa). It is some work to make, but well worth the effort. If you look at most all Pico De Gallo recipes, they are mostly all exactly the same, and I wanted to add something and I did. At our local Asian market, I found some great Thai peppers that are like the ones I enjoyed when traveling in Thailand. The Thai peppers really added some great heat with flavor to the Pico De Gallo.
