Who does not love a good chicken salad? This copycat recipe for the chicken salad at Chik-fil-A looked good so I thought we would give it a try.
Ingredients
1/2 cup mayonnaise (pick your favorite, we used Duke’s light mayonnaise)
1/3 cup sweet pickle relish
1/3 cup chopped celery (I chop up pretty small as I’m not a fan of big celery chunks)
1/2 teaspoon sugar
1/4 teaspoon Kosher salt (or whatever salt you like)
1 hard-boiled egg, minced
2 cups cooked chicken breast – chopped (I used Sous Vide to cook the chicken – check out the video)
Your favorite bread – we like ours toasted
lettuce leaves
Directions
Sous Vide chicken at 155F for 2 hours.
Shred chicken with 2 forks and let cool completely.
Mix ingredients up to the bread.
Cool for at least 1 hour (if you like)
Toast up the bread, put some lettuce on each on and then top with chicken salad and enjoy.
